Costco shoppers divided over new 'sourdough' bread as critics say it's not the real thing

Costco sells a Kirkland brand olive and rosemary sourdough bread with an ingredient list that includes commercial yeast and additives alongside traditional sourdough components. Sourdough purists define the bread as requiring only flour, water, salt, and a natural starter culture fermented over time, without commercial yeast or dough conditioners. The Costco product contains ingredients including yeast, diacetyl tartaric acid esters of mono- and diglycerides, and other additives. Some customers have purchased and consumed the bread; others have declined to buy it based on ingredient concerns.
